The Janissaries were captured Christian slaves in the Ottoman Empire from the sixteenth century until 1828 when all 20.000 of them were murdered by a private army loyal only to the Sultan. They were the bureaucratic class that ran the Ottoman Empire. They even had their own army.

Pictured Left is the Chief Janissary Cook from early in the nineteenth century.
